Bacon Guacamole

On this blog, Saturday is Bacon recipe day. So no Excel tips and tricks today. Today we learn about bacon.

 

I’m in the mood for Mexican food. So let’s make some Bacon Guacamole!

Here’s what you’ll need:

 

5 strips of bacon

3 medium-large, ripe avocados

1/2 medium-large white onion, chopped into 1/4-inch pieces

2 canned chipotle chilies (finely chopped)

1 medium-large, round, ripe tomato, cored and chopped into 1/4-inch pieces

1/4 cup) loosely packed, coarsely chopped fresh cilantro

Salt

2 tablespoons fresh lime juice

 

1.In a large, 10-inch skillet, cook bacon until crisp and browned. Drain on paper towels, then crumble into small pieces.

2. Scoop avocado flesh from skin into a large bowl. Using an old-fashioned potato masher or a large fork or spoon, mash avocados into a coarse puree.

3. Add onion, chipotle chilies, tomato, bacon and cilantro to the mashed avocado. Gently stir to combine all ingredients

4. Taste and season with salt and lime juice to add a little sparkle.
