Bacon and Cheese Soup

On this blog, Saturday is Bacon recipe day. So no Excel tips and tricks today. Today we learn about bacon.

 

I missed Bacon Recipe Saturday last week. I was writing and traveling. While I was AWOL from my bacon duties, Christine sent me this cartoon.

 

That got me thinking about chicken soup, and how people sip on chicken soup when they are sick.

I wondered if I could have bacon soup if I got sick. It turns out; I can have Bacon and Cheese Soup!

 

Here’s what you’ll need.

8 slices bacon
1 tablespoon butter
1/2 cup shredded carrots
1/2 cup chopped onion
2 tablespoons flour
1/4 teaspoon dry mustard powder
Salt and pepper to taste
1 teaspoon white wine Worcestershire sauce
1 (13 ounce) can evaporated milk
2 cups milk
2 cups shredded American cheese

 

In a large saucepan, cook bacon until crisp over medium heat, turning frequently.

Remove bacon to paper towels to drain.

Remove all but 2 tablespoons drippings from saucepan.

Add butter to saucepan along with carrots and onion.

Cook over medium heat for 3-4 minutes until crisp tender, stirring frequently.

Add flour, mustard, salt, pepper and Worcestershire sauce.

Cook until bubbly, about 2-3 minutes.

Add both kinds of milk and cook until soup has thickened a bit, about 10 minutes.

Stir in cheese until melted.

Stir in bacon and serve.

 

Notes: It’s fun to pour this soup into a 32oz cup and drink it like a fitness shake.  People will think you’re health conscious.
