I’ll be honest. I love Johnny-cakes; also known as cornbread.
I’d personally like to think the name Johnny-cake came from some hard-drinking pioneer genius named Johnny, who by day, cooked up delicious cakes, and by night, bedded the women folk. Apparently Wikipedia has a much more boring story than that.
Nevertheless, today’s recipe is Bacon Cheese Johnny-Cakes.
Here’s what you’ll need
•1 package corn muffin mix
•1/2 cup grated sharp Cheddar cheese
•6 slices crisply cooked and crumbled bacon
•1 egg
•milk, as label directs
Empty corn muffin mix into a medium mixing bowl.
Stir all but 1 tablespoon of the cheese into the muffin mix.
Stir all the bacon into the muffin mix.
Add the egg and milk, following the label directions (on the muffin mix packaging).
Pour batter into a greased and floured 8-inch square baking dish.
Bake at 400° for 15 minutes
Sprinkle the remaining cheese over the top of the muffins and bake for 10 minutes longer, or until cornbread browned and firm.
Notes: Unfortunately, eating too many of these will ensure you don’t bed any women folk for at least nine hours. Scientists aren’t sure why.
